Savoury Platter Ideas
- Vegetable sticks (carrot, capsicum, blanched asparagus, celery)
- Cherry tomatoes, halved
- Tomato, feta and basil on toothpicks (cherry tomato half either end, with a piece of basil and a piece of feta in between)
- Cucumber rounds with feta on top (slice peeled cucumber, cut into thickish rounds and place a piece of feta on top) You can place a tiny piece of something red on top of the feta for effect, i.e. sundried tomato or red capsicum
- Cucumber rounds with lite cream cheese and smoked salmon
- Hummus
- Tzatziki (yoghurt dip). You can make your own by combining low fat plain yoghurt with grated cucumber, a little garlic and black pepper
- Rice crackers
- Small pieces of pita bread baked until crisp
- Baby new potatoes steamed until just tender. Cool then cut in half horizontally, top with lite sour cream and a tiny blob of pesto or chutney
- Asparagus spears lightly blanched, then plunged into cold water. Drain and refrigerate to crisp up
