Cauliflower Mash Topped Lamb Mince
Serves 6
Ingredients
- Olive oil
- 600g lamb mince
- 1 large onion, diced
- 3 -4 garlic cloves, crushed
- 1 stick of celery, chopped
- 2 cups mushrooms, sliced
- 1 can diced tomatoes
- 1 sachet tomato paste (2-3 Tbs)
- 3 Tbs chopped mint
- 1 tsp dried rosemary
- 3/4 tsp cinnamon
- 2 tsp dried oregano
- Salt and pepper to taste
Layers
- 3 medium zucchini, thinly sliced
- 3 Tbs grated Parmesan
Topping
- 1 medium cauliflower made into cauliflower mash
Method
Sauté the mince, onion, garlic and celery until the mince is browned and the veggies tender, then add the rest of the mince ingredients. Stir, bring to boil then lower the heat and simmer for 20 minutes.
Using a deep, square baking dish which has has been coated with oil spray, pour half of the mince mixture in. Smooth out, then place half the zucchini slices on top, followed by the rest of the mince mixture and the rest of the zucchini slices. Scatter Parmesan over the zucchini and push the slices down into the mince a bit. Top with creamy mashed cauliflower.
Bake at a 180 degrees for about 30 minutes, or until the mash is golden. Serve with additional steamed veggies or salad greens.
