Low Carb Vegetables
Select a good variety of colours from the following vegetables:
- Asparagus
- Beans (green, not broad beans or Edamame beans)
- Bok Choy and other Asian greens
- Broccoli
- Brussel sprouts
- Cabbage
- Capsicum – use a small amount for low carb
- Cauliflower – great for cauliflower mash and cauliflower rice
- Celery
- Courgettes (zucchini)
- Cucumber
- Eggplant (aubergine)
- Garlic – use a small amount for low carb
- Herbs
- Kale
- Leeks
- Lettuce
- Mung beans (and other bean sprouts)
- Mushrooms
- Onion (red onions for salad too) *use a small amount for low carb
- Radish
- Rocket
- Silverbeet
- Spaghetti squash-the yellow fibrous one
- Spinach (remember baby spinach for salads also)
- Tomato – use a small amount for low carb
Focus on above the ground veggies as they are lower in starch than below the ground veggies as a rule.
