Vegetarian Salad Bowls
Salads don’t have to be boring! We are so fortunate in New Zealand to have a huge variety of fresh vegetables to choose from.
Here are some suggestions to add to salads. Always have some green(s) plus coloured veggies, then add one or two protein sources and a few seeds or nuts to complete your delicious, healthy salad.
Salad base ideas:
Baby spinach leaves
Baby kale leaves
Other baby green leaves
Shredded cabbage, red and green
Herbs – fresh basil, parsley, mint, etc
Then add some of these:
Red onion
Roasted cubes of beetroot or grated beetroot
Cucumber
Capsicum
Tomatoes
Roasted pumpkin cubes
Carrot
Very lightly steamed asparagus
Sprouts – chickpea, broccoli, radish sprouts, etc – they are all very nutritious
Vegetarian protein options:
Haloumi
Edamame beans
Legumes – chickpeas, bean mixes, lentils
Cottage cheese
Tofu cubes
Not Chicken ‘chicken’
