Vegetarian Pizza

Serves 3

Ingredients

  • 2 x 50g tortillas (I used World Oven tortillas)
  • 400g can chilli beans
  • ½ large red onion, finely chopped
  • 150g pot plain, low fat yoghurt (Weight Watchers/Slimmers Choice)
  • Baby spinach leaves
  • 30g tasty cheese, grated (or 35g Edam)

Method

Place the tortillas on an oven tray(s). Spread with chilli beans, then sprinkle chopped onion over. Blob yoghurt over the beans, sprinkle with a couple of handfuls of baby spinach and then scatter grated cheese on top.

Bake at 200g for about 10 minutes, or until the base is crispy and the cheese is lightly browned.
