Vegetarian Chilli Bean Dish

vegetarian chilli bean dish

Serves 6

Ingredients

  • Olive oil or olive oil spray

  • 2 medium onions, chopped

  • 3 (or more) cloves of garlic, crushed

  • 1 large carrot, diced

  • A few sticks of celery, diced

  • Mushrooms (optional)

  • 400g pumpkin (optional)

  • 2 cans of diced tomatoes

  • Sachet of tomato paste (2 Tbs)

  • 1-2 Tbs smoked paprika

  • Level 2/3 tsp chilli flakes (1/2- 1 tsp depending on how hot you like it)

  • Salt and pepper to taste

  • 2 x 400g cans of black beans

  • Bag of baby spinach leaves to add at the end of cooking (optional)


Method

Heat the olive oil/oil spray in a large heavy bottomed pot and sauté the onions and garlic for a few minutes. Add the rest of the veggies (apart from the spinach) and cook for a few minutes longer, until the veggies have wilted.

Add everything else, apart from the spinach, cover the pot and simmer gently for about 40 minutes or until cooked. Taste and adjust seasoning if required.

If desired stir through the bag of baby spinach leaves at the end of cooking, so that they just wilt.

Serve with additional veggies on the side, such as broccoli/beans/cauliflower.

It is nice served with a blob of plain yoghurt on top.
