Tofu Stir Fry
Serves 4
Ingredients
- 300g packet firm tofu cut into bite sized cubes
- 1 large carrot cut into thin sticks
- 1 tsp crushed ginger
- 2 level tsp crushed garlic
- 1 large onion chopped finely
- 1 small head broccoli cut into small florets
- 1 medium courgette
- 1-2 cups sliced mushrooms
- 1 capsicum sliced
- 1 packet Lee Kum Kee teriyaki sauce (from Asian / International section of supermarket)
Method
Spray a large non stick pan over medium heat and add onion, garlic and ginger, cook about 3 minutes or until onion is soft. Add sliced carrots and cook another two minutes then add the rest of the veggies. Cook another 2 minutes then add tofu and stir well. Add sauce, stir and cook over gentle heat about 5 minutes and then serve with rice and/or extra vegetables.
