Stuffed Chicken Breasts

One large breast serves 2

Ingredients

  • 2 large chicken breasts – butterflied

  • Tomato paste or pesto

  • 4 small sundried tomato halves in oil

  • Baby spinach leaves

  • 4 Tbs full fat cream cheese

  • 3 slices of eye bacon

Method

Spread tomato paste or pesto on the opened out breasts. Place cream cheese on top (two Tbs per breast), then spinach. Add sundried tomatoes (or you could add mushrooms or Parmesan). Close the chicken breast.

Place 1 ½ slices of eye bacon on top of each stuffed breast and bake at 180 degrees until cooked, around 40-45 minutes depending on how thick the chicken ‘parcel’ is.
