Spicy Chickpea and Pumpkin
Ingredients
- 2 cans chickpeas
- 2 cans crushed tomatoes
- 1large onion
- 4 cloves garlic
- 600g pumpkin
- ½ tsp chilli paste
- ½ tsp cinnamon
- 1 tsp smoked paprika
- 1 tsp turmeric
- 1 tsp cumin
- Zest and juice of a lemon
- Salt and pepper
- Parsley
Method
Saute onion and garlic, add spices and cook another 2 minutes. Add all but parsley.
Simmer about 20 minutes or until the pumpkin is tender.
Add parsley and serve with veggies
Courgettes or other veggies could be added to the mix.
