Pumpkin, Vegetable, Chickpea and Bean Soup
Serves 8 or more
Ingredients
- 2 onions chopped
- Few sticks of celery sliced
- About 500g pumpkin cubed
- 2 medium carrots chopped
- 2 small kumara chopped
- 2 x cans cannellini beans
- 1 x can chickpeas
- 1 x small can tomato soup concentrate + 3 x cans water
- Can chopped tomatoes + 1 can water
- 3 tsp smoked paprika
- Salt and black pepper
Method
Cook all, then puree. Serve with plain low fat yoghurt on top.
