Pizza Zucchini
Ingredients
4 medium-large zucchini, sliced in half horizontally
2 sachets of tomato paste (about 4 Tbs)
2 tsp dried mixed herbs, approximately
Fresh basil leaves (optional) – enough to cover the surfaces
garlic cloves, crushed or finely chopped
1 to 1 1/2 cups sliced button mushrooms
Tomato slices to cover
Grated cheese, tasty/Parmesan or other, around 1 cup
Black pepper
Method
Place the halved zucchini in a baking paper lining baking dish. Spread tomato paste on the cut side, then sprinkle with dried mixed herbs. Top with the rest of the ingredients, grind black pepper over the tomato slices, add cheese last.
Fan bake at 180 degrees for about 30 minutes, or until the zucchini is just tender when you stab it and the cheese is golden.
Remember to add a protein source to make this a complete meal.
These were so yummy that next time I will make a whole baking dish full and use them as leftovers with lunches or dinners.
