Low Carb Pizza Omelette
Serves 2-3.
Ingredients
Base:
4 eggs
170g mozzarella cheese, grated
4 Tbs full fat cream cheese
Toppings:
Tomato paste to spread
1 tsp mixed dried herbs, scatter over paste
Sliced tomatoes/mushrooms/capsicum/red onion
Grated cheese of choice to top
Method
Whisk all base ingredients together in a large bowl. The mixture won’t be smooth, it just needs to be combined and a hand whisk should be fine.
Pour into a baking paper lined baking dish, round or oblong, and bake at 200 degrees for about 15-20 minutes, or until starting to lightly brown.
Add your favourite toppings and put back in the oven for about 10-15 minutes, or until the cheese on top has melted.
Very light, gluten free and super quick and easy to make.
