Mince and Mushroom Breakfast Delight
Ingredients
Patties:
- 250gms lean mince
- 1/2 teaspoon each of cumin, ground coriander, paprika, turmeric
- Handful of chopped fresh parsley
- 1 tablespoon of sweet chilli
- 1 clove of minced garlic
Mix well and form into 5 patties
Then per serving:
- 1 teaspoon each of pesto and light cream cheese
- 2 Portobello mushroom
- Spinach or rocket
- Tomato
Method
Bake the mushroom for about 15 – 20 minutes depending on its size
Lightly fry the patty in 1/2 to 1 teaspoon of coconut oil, add pesto and cream cheese, tomato and rocket and place patty on top.
2 patties + 2 x pesto and cream cheese mushrooms per serve
