Low Carb Lamb Shanks in the Slow Cooker

Serves 4 - 6

 

Ingredients

  • 4 lamb shanks
  • 2 onions, sliced
  • 4-6 cloves garlic, crushed or sliced
  • 3 sticks celery, sliced
  • 400g tin chopped tomatoes
  • 2 Tbs tomato paste (1 sachet if you buy them in a box)
  • 150mls red wine (optional)
  • Salt and pepper

Method

Brown the lamb shanks in a large oiled frying pan, then place in the slow cooker. Sauté the onion, then add the garlic and celery and cook a few more minutes. Tip over the shanks, then add the rest of the ingredients.

Cook on high for about 5-6 hours, or until the meat falls off the bones. Shred the meat, give the bones to the dog and then place the casserole contents into a container and chill overnight. Next day skim the fat from the top and reheat as required.

This is lovely served with cauliflower mash and green veggies.

Note:  You could add other veggies such as mushrooms, courgettes, etc to the slow cooker if you have them on hand.
