Low Carb Frittata ‘Muffins’
Ingredients
- 8 eggs beaten with salt & pepper and dried herbs
- 2 medium zucchini grated
- Few asparagus spears lightly cooked and chopped (optional) or broccoli/capsicum
- ½ medium red onion
- Mushrooms
- 2 large slices of ham (50-100g) – or bacon or chicken
- 60g grated cheese
Method
Spray 6 deep Texas muffin pans, then ladle the mixture in and bake at 200 degrees for about 25-30 mins.
Each muffin is about 220 calories each.
