Low Carb Frittata ‘Muffins’

Ingredients

  • 8 eggs beaten with salt & pepper and dried herbs
  • 2 medium zucchini grated
  • Few asparagus spears lightly cooked and chopped (optional) or broccoli/capsicum
  • ½ medium red onion
  • Mushrooms
  • 2 large slices of ham (50-100g) – or bacon or chicken
  • 60g grated cheese

Method

Spray 6 deep Texas muffin pans, then ladle the mixture in and bake at 200 degrees for about 25-30 mins.

Each muffin is about 220 calories each.
