Low Carb Frittata

Serves 4

Ingredients

  • 8 eggs
  • 1 cup cream
  • Bunch spinach, washed, drained and torn, stalks removed
  • 150g diced bacon
  • 1 medium courgette, diced
  • Butter for frying
  • 120g strong tasting cheese, I used Vintage
  • Salt and pepper
  • Parsley or other herbs, optional

Method

Fry bacon in butter until crispy. Add courgette, cook for a couple of minutes, then add spinach.

Whisk the eggs and cream together and pour into a greased baking dish. Stir in herbs if using.

Put bacon, veggies and then cheese on top and cook at 180 degrees for about 40 minutes, or until puffed up and golden.

Serve with steamed broccoli or salad.
