Lettuce Wrapped Chicken Burgers
Ingredients
Chicken breasts or tenders - around 150g raw weight per person
1 Tbs sauce per person (I used Barker’s BBQ jerk sauce)
Veggies
20g cheese per person
Method
Mix chicken and sauce and leave in fridge for about an hour.
Slice up a selection of veggies. I used zucchini, mushrooms, onions, garlic and capsicum.
Allow 20g cheese per person. I used feta.
Cook chicken and veggies on an oiled BBQ plate until the chicken is just cooked.
Arrange a few large lettuce leaves on each plate, place a piece of chicken on the leaves and then add the veggies and cheese. Carefully roll up and eat like a wrap.
It’s a bit messy, but pretty yummy.
You could swap out the chicken for beef burger patties, fish, pork steak or haloumi.
