Lettuce Wrapped Chicken Burgers

Ingredients

  • Chicken breasts or tenders - around 150g raw weight per person

  • 1 Tbs sauce per person (I used Barker’s BBQ jerk sauce)

  • Veggies

  • 20g cheese per person

Method

  • Mix chicken and sauce and leave in fridge for about an hour.

  • Slice up a selection of veggies. I used zucchini, mushrooms, onions, garlic and capsicum.

  • Allow 20g cheese per person. I used feta.

  • Cook chicken and veggies on an oiled BBQ plate until the chicken is just cooked.

  • Arrange a few large lettuce leaves on each plate, place a piece of chicken on the leaves and then add the veggies and cheese. Carefully roll up and eat like a wrap.

It’s a bit messy, but pretty yummy.

You could swap out the chicken for beef burger patties, fish, pork steak or haloumi.
