Lettuce Wrapped Burgers

Serves 4, makes 8 patties

Ingredients

For the burger mixture:

  • 550g lean mince (or low carbers can use fatty mince if desired)
  • 1/2 small red onion, finely diced
  • 1 egg, beaten
  • 1 Tbs ground linseed
  • 2 Tbs Gaults no added sugar Ketchup
  • 1 tsp dried mixed herbs
  • Salt and pepper 

For the wraps:

  • 4 big iceberg lettuce leaves (wash and chill for a few hours ideally so they are crisp)
  • Gaults ketchup
  • 4 x 20 pieces of feta cheese
  • Other half of small red onion, sliced
  • Halved cherry tomatoes
  • Sliced red capsicum

Method

Mix all pattie ingredients together and form into patties. Barbeque, pan fry or grill until just cooked. Lay the lettuce ‘wraps’ on your plate, place a burger pattie on each, squirt a small amount of ketchup on top, then the feta and veggies. Wrap up, grab a paper towel and away you go. Warning: Eat over a plate, it’s a bit messy!
