Kumara and Cottage Cheese – Lunch for one
Ingredients
120g kumara with skin on
125g lite cottage cheese
2 tsp sweet chilli sauce
Salad greens + other salad items
Method
Wash and prick the kumara, microwave around 2 – 2 ½ minutes on high, or until tender, then split it open and stuff with the cottage cheese. Pour the sweet chilli sauce over and place on a bed of salad greens.
