High Protein Coconut Porridge

Ingredients

Porridge mixture

  • 1/3 cup rolled oats
  • 1 dessertspoon sunflower seeds
  • 1 dessertspoon coconut butter

Plus 2 Tbs whey powder (I use Red 8) + water

 

Method

Soak overnight the porridge ingredients in the bowl / jug you are going to cook the porridge in (just cover with a small amount of water to dampen the mixture).  This makes it more creamy the next day.

When you want to make the porridge, add boiling water, stir and cook on high in the microwave for 2 minutes. Stir and cook for another 2-3 minutes, until the porridge is creamy and soft. You may need to add more boiling water during cooking if it is too thick.

When ready, stir until smooth. Shake up the whey powder with just enough water to make a milk like texture (don’t make it too thin, you can always add more water) and pour some over the cooked porridge. This sweetens and flavours the porridge and adds quality protein.  Drink the rest of the whey!
