Curried Mince for the Family
Serves 4
Ingredients
- 500g lean beef mince
- 1 medium onion
- 3 level tsp curry powder
- 1 cup frozen peas
- 1 large carrot cut into small cubes
- 2 tbs tomato sauce
- 1 tbs soy sauce
- 2 tbs chutney
- 1 cup water
- 2 cups fin ely sliced cabbage (optional)
- (other optional vegetables could include mushrooms, courgettes, capsicum, etc)
Method
Spray a non stick frypan with cooking oil spray and when hot add mince and onion and stir until mince has browned. Add curry powder and stir another minute or two then add the rest of the ingredients.
Cover and bring to the boil then turn down and simmer for about 20 minutes. Add more water if required, or if too runny, remove lid and increase heat until liquid reduces, or thicken with a little cornflour and water.
Serve with extra fibrous vegetables such as beans, broccoli, cauliflower, etc.
Leftover curried mince can be used as filling for a filo strudel, or it could be topped with mashed potato for a family pie.
The recipe can be doubled if required.
