Chocolate Overnight Oats
Ingredients
30g oats
1 tsp cocoa
10g (2 level tsp) chia seeds *
25g vanilla whey powder (see variation below) **
3 tsp unsweetened yoghurt *
50g blueberries (or other berries)
Water to mix
Method
Put the oats, cocoa, chia and whey into a small ramekin or serving bowl and stir to mix. Add the yoghurt, plus enough water to mix to a fairly soft texture. The oats and chia will thicken up overnight. Add the berries.
Cover and leave in the fridge overnight.

*10g of chia, OR 5g chia + 5g coconut flakes, OR 5g LSA, – use whichever you prefer to a total of 10g which is 2 level tsp
** If you don’t use whey powder, increase the unsweetened yoghurt (unsweetened Greek is fine too) to 150g and mix that in, plus water if you need a looser mixture. The whey sweetens the oat mixture and adds extra protein
*** If you want to make a higher calorie overnight oat mix, add almonds or crushed nuts/seeds on top to serve
