Chicken Wrapped in Bacon

Ingredients
- 150g raw, skinless chicken breast (200g for men)
- 1 rasher of eye or shortcut bacon, well trimmed of fat
Method
Place the chicken breasts in a baking dish and lay the bacon on top. There is no need to secure the bacon, it stays there on its own.
Mix up 1 teaspoon of chicken stock powder to one cup of boiling water and gently pour over the chicken to a depth of about 2cm in the baking dish.
Put in a 180 deg oven and bake until chicken is cooked through, around 25 minutes.
Serve with a big salad or veggies. You can also partially pre-cook a jacket potato in the microwave for about 2 minutes (depending on size, until it just ‘gives’ a little) and put that in the oven with the chicken to finish cooking.
This is such an easy recipe, but it tastes delicious so it is worth cooking plenty of extra chicken for leftovers.
