Cauliflower Fried Rice
Serves 4 or more
Ingredients & Method
- Medium size cauliflower, roughly chopped
- 1 large carrot
- 4-5cm piece of fresh ginger
Put the above ingredients into a food processor until they look like rice. Set aside.
- 1 large onion, finely chopped
- 3 large cloves of garlic, finely chopped or crushed
Heat 1 Tbs oil in a large frying pan and add the onion and garlic. Cook over moderate heat until soft, don’t rush this and burn the onion and garlic!
Add the cauliflower mixture and keep tossing and stirring until tender. This makes quite a large mixture so it takes a while. You may need to add a dash more oil. When the cauliflower mixture is tender, taste and season.
