Breakfast Crunch Topping

This yummy crunch makes a great topping for your yoghurt and fresh fruit.

Ingredients

You can vary the ingredients to suit - there is no set amount of each ingredient, but 25g is a serving. Remember, it is a topping, not the whole event as it is high in calories.

Here is what I used.

Into a food processor put:

  • 1 cup coconut flakes (I used the Macro range from Countdown)

  • 1 cup sunflower seeds

  • 1 cup raw almonds

  • 1 cup walnuts

  • 1/2 cup pumpkin seeds

  • 1/2 cup whole linseeds (but you could use LSA or ground linseed instead, or leave it out)

Method

Pulse all together until the consistency you prefer and then store in an airtight container in the fridge or freezer to keep it fresh.


Sample Breakfast Recipe

  • 100g berries (fresh or frozen)

  • 150g plain yoghurt

  • 25g breakfast crunch
