Help – it’s Winter, what do I eat?
Yes, all of a sudden, salads don’t hold quite the same appeal as they did on warmer days. But what do you eat instead?
Lunches are usually the sticking point and you still need to have a source of protein, plus a decent serve of veggies. If you want to enjoy a hot lunch it usually means needing to do some food prep.

Soup. Soups are a great way to use up any sad veggies lurking in the fridge as well as being warming and filling. Check out my soup recipes here. My thick veggie soup is really popular and is one that I make regularly and freeze, as it makes around 10 servings.
Frittatas. Frittatas are also a great way to include veggies in your lunch and can be made ahead of time. Serve them on a bed of baby spinach or other greens to up the nutritional value.
Jacket potato or kumara + protein and veg. Try Kumara with Cottage Cheese. You can vary the protein and instead of cottage cheese, try 100g of shredded chicken mixed with 1 dsp of sauce of choice, then heated in the microwave to top your potato with.
Vegetarian Strudel. Vegetarian Strudel is best eaten hot so that the filo is crispy.
A hearty vegetable base. Find the base mixture here - and just add protein.
Meal planning and preparation goes a long way to making life easier, as does cooking enough to have leftovers for the next night.
Post lockdown weight gain
This morning I caught up with a friend who has been through a pretty tough time over lockdown, business-wise. She confided that she has gained eight kilos and she is very unhappy about it. There will be a lot of people who have had a challenging time over the past few months and who have found their mindset around eating, drinking alcohol and exercise has fallen out of step with their goals. It can be really hard to get back up on the wagon sometimes and winter doesn’t help.

Something I find really common with clients whose weight loss has stalled is not so much that they are eating the wrong thing, but that they aren’t eating enough of the right thing. For instance, the most common mistakes are not eating enough veggies with lunch (and maybe dinner), grazing throughout the day and eating too many carbs. If you keep an honest food diary for even a few days you should be able to identify where you are going wrong.
