Black Bean and Veggie Patties
Makes 10 patties, serves 5
Ingredients
- 1 can black beans, drained
- ½ cup sunflower seeds
- ½ cup pumpkin seeds
- 1 medium carrot, grated
- 1 medium zucchini grated
- 1 handful of baby spinach
- 1 medium onion finely chopped
- 1 egg
- ½ cup flour
- 1 teaspoon chilli powder (rounded if you like more bite)
- Salt and pepper
Method
Add seeds to food processor and finely chop. Add ½ the black beans and all the other ingredients and process until well combined, but not smooth. Stop while the mixture is still chunky, then add the remaining beans and stir in.
Divide into 10 patties. If the mixture is too sloppy (this depends on how ‘wet’ the grated veg are) add a little flour, or if you have time refrigerate the mixture for 30 minutes before making into patties.
Put the patties on to a baking paper lined baking tray and bake for about 30 minutes, or until golden and crisp.
Serve with extra veggies or salad and a spoonful of chutney.
