Berry Jelly Delight

Serves 4

Ingredients

Jelly:

  • 400g bag of raspberries, defrosted. Retain the juice

  • 1 low calorie berry jelly (Aeroplane jelly lite or WW)

  • 1 cup boiling water

  • Additional cold water

To Finish:

  • Greek yoghurt (or ice cream or custard)

  • A few fresh berries

  • Grated or shaved dark chocolate


Method

Mix the jelly crystals with the cup of boiling water in a bowl and stir until dissolved. Add enough water to the saved berry juice to make 1 cup and mix in. Cool for about 10 minutes then stir in the defrosted berries and put the bowl in the fridge to set.

When ready to serve, layer the jelly and yoghurt, add fresh berries on top and then grate over some dark chocolate.

A fancier version (but higher in sugar) would be to add crushed meringues on top of the yoghurt before adding the topping.
