Bean and Potato slice - Yummy Vegetarian Family Meal

Serves 6

Ingredients

  • 600g potatoes – washed, unpeeled and sliced thinly
  • Large onion chopped
  • 2 cloves garlic chopped or 2 tsp crushed garlic from a jar
  • 420g can baked beans
  • 420g can chilli beans
  • 400g can chopped tomatoes
  • ½ tsp sugar
  • 90g grated parmesan or Edam cheese
  • Optional:  1 tsp smoked paprika if you like a smoky flavour

Method

Put potato slices in a pan of cold water and bring to the boil.  Boil gently for about 5 minutes, or until just tender, do not overcook.  Drain under cool water.

While potatoes are cooking, spray a large non stick frypan with cooking spray and cook onion and garlic until soft, but not browned.  Add beans and tomatoes, sugar, and if using, smoked paprika.  Mix well and simmer for 8 minutes, stirring from time to time so the mixture doesn’t stick to the pan.

Using a 30cm x 20cm ovenproof dish, spoon in ½ the bean mixture and then layer ½ the potato slices on top and repeat.  Sprinkle grated cheese over top layer of potatoes and bake at 200 degrees for about 35-40 minutes, or until the cheese is golden and the potatoes crispy.

Serve with steamed green veggies or a salad.

This tastes even better the next day!
