Banana Pancakes - Gluten Free
Per person
Ingredients
- 1 medium banana
- 2 room temperature eggs
Method
Mash banana in a bowl, add eggs and whisk well.
Spray a non stick pan with cooking spray and cook pancakes over a moderate heat. Turn heat down if necessary.
Serve topped with lite Greek yoghurt and berries
- You could add cinnamon or other spices to the batter
- Room temperature eggs work best for thicker pancakes
